Food handler rules
These questions follow the FDA Food Code. State and ANAB-accredited exams test this food-safety material.
Some states set statewide food-handler rules. Read the official pages: Alaska, California, Florida, Illinois, New Mexico, Oregon, Texas, Washington.
In other states, check with the local health department. This is general information, not legal advice.
FL: Covered food-service employees must complete state-approved food-safety training every three years. The rule does not require an exam. Official FL page
TX: Covered food employees must complete accredited training within 30 days of hire. Texas also requires training for bare-hand contact with ready-to-eat food, which is food served without more cooking. Official TX page
IL: Food handlers need training and a knowledge check. New employees have 30 days to complete it. Illinois does not issue a food-handler card. Official IL page
